A week ago, Brisbane woman Candice Hedge, 34, faced death at the hands of a man she calls a “coward” for stabbing her in the throat as she tried to hide.
She was one of 48 people wounded when three men armed with knives drove a van into a crowd of pedestrians on the London Bridge and then indiscriminately stabbed Londoners on a night out.
Among the eight who died were two Australians – nurse Kirsty Boden and nanny Sara Zelenak.
Candice and her British partner Luke Galea-Naudi were both working at Elliot’s Café in Borough Market.
They told Melissa Doyle from Channel 7’s Sunday Night it was just a typical Saturday night when the attack started.
Then people started rushing into the restaurant.
“I was trying to figure out what was happening and then someone said there’s a guy outside with a knife approaching,” Candice said.
Luke decided to have a look outside and, 15 metres away, he saw the men. He then tried to get people downstairs to safety while Candice hid as best she could in a corner.
“I did see one of our customers get stabbed,” she said.
She was almost safe but was spotted by one of the killers.
“I think he was leaving but he saw me there. And it was just one quick … go and that’s it.
“He looked at me. I looked at him. I can’t really remember what he looked like. He got me.”

Candice made her way downstairs to Luke.
She was vomiting blood.
“I was thinking for a moment that I wasn’t going to make it.”
Luke tried his best to stem the bleeding.
“That’s when the worst thing that I could have imagine happening, happened. Candice comes running downstairs clutching a cloth,” he said.
“I was putting pressure on her wounds, telling her to breathe, just focus and breathe.”
The ambulances couldn’t get into the area so Candice and Luke had to walk out of the restaurant to the medical teams.
“It was pretty full on,” she said. “I wanted to get through this and I wanted to get out of there.”
She was incredibly fortunate that the knife missed her main artery and her vocal chords. She’s shocked that two other Australian women weren’t as fortunate.
“I don’t know if I’m lucky or unlucky to have made it. I just want to be as positive as I can about the situation.”

Both are planning to go back to work in Elliot’s Café as soon as they can.
“The last thing I want to do is be scared off by this. People are cowards,” Candice said.
“We can’t let our lives be ruled by fear. We need to carry on, be strong together.”
Luke has no doubt she will do just that.
“She comes across really reserved and shy sometimes but deep down she’s got guts. She’s an incredible person. Love her to bits.”
